These are yummy. I like them baked in individual ramekins because they look pretty and you can transport them more easily to work. How long they cook will depend on the size of your dish so check their "doneness" as you would a cake with a bamboo skewer. If dry they are ready.
Ingredients
1 bunch silverbeet, roughly chopped and stalks discarded
1 tbs extra virgin olive oil (see olive oil)
1 onion - brown diced finely
2 shallots chopped
½ cup mint, roughly chopped
150 gram goat's cheese, broken into small pieces
15 eggs
1 tbs lemon juice
0.12 tsp cracked black pepper
