There's a glut of citrus fruit this year and grapefruits, so often excruciatingly tart, are sweet, juicy and delicious. Stored in the fridge, grapefruit will keep for up to 5 weeks but to enjoy its full flavour should be eaten at room temperature.
Peel the grapefruit, remove the pith and cut it into segments. Collect any remaining juice to use in the dressing. ( 1 tbs is sufficient) Combine the dressing ingredients and the grapefruit juice. Arrange the leaves on a platter and lay the grapefruit slices on top. Drizzle with dressing and serve.
Note : Grapefruit once believed to have fat burning qualities and is said to be good for reducing high blood pressure, toxic overload and circulatory problems and intestinal worms.
