 
			
	
	Daikon radish is believed to be a "fat burning food" in traditional Chinese medicine. The juice is also believed to relieve hangovers. It has the same texture as red radish with less peppery flavour.
Slice daikon very thinly. (You should be able to see through it). Place in a bowl with wet ingredients, place a plate on top and a weight and leave for 45 mins - 1 hour. Drain and serve a teaspoon with the meal.
Note: In macrobiotic cooking, pickle is served with each meal to aid digestion. The acid from the pickle helps to breakdown the food as well as stimulating the production of digestive salivary enzymes.
