Free Healthy Recipe - Beef & Sesame Tabouleh Wraps

Dairy free, Low carbohydrate, Low GI

These are lovely to pass round your guests before the main meal comes out. Any excuse to include tabouleh I say! Tahini is a great substitute for butter in a recipe like this. It compliments the flavour, is a good source of calcium and fibre and, compared to butter, has very little saturated fat.

Ingredients
2 vine-ripened tomatoes deseeded and finely chopped
1 Lebanese cucumber finely chopped
2 cups flat-leaf parsley, chopped
2 cups fresh mint leaves, chopped
2 shallots finely chopped
2 tbsp sesame seeds
3 garlic shoots finely sliced
1 lemon juiced
2 tbsp olive oil
600 grams beef strips, (or 600g rump steak), sliced thinly before cooking
3 tbsp tahini paste
Method

Combine the tomato, cucumber, parsley, mint, shallots and sesame and garlic shoots together in a bowl. Mix the olive oil and lemon juice together and stir through.

Mix the smoked paprika and olive oil together and brush over the beef.
Cook on a pre heated BBQ for 3 - 5 minutes.

Spread the mountain bread with a thin layer of tahini paste. Add the tabouleh and top with the warm beef. Wrap into small packets and cut in half.

Tip: When cooking beef strips cook the first side until the first sign of moisture appears on the uncooked side, then turn and cook the other side to complete the cooking. This way the beef will brown well.
