Free Healthy Recipe - Baked Salmon with English Spinach and Sweetcorn

Low carbohydrate, Low GI, Wheat Free

With fresh salmon costing around $30 a kilo it's a luxury for many who have more than two mouths to feed. It's the best natural source of Omega 3 and makes a fantastic choice for singles - much cheaper than buying takeaway and considerably healthier.

Ingredients
1 fillet salmon, skin removed
1 cob sweetcorn
¼ capsicum cut finely
½ lime juiced
1 tsp honey
1 tsp miso paste
½ bunch English spinach
Method

Preheat the oven to 180 degrees Celsius.

Wipe the salmon steak with a damp absorbent paper.
Remove the sweetcorn kernels from the cob into a bowl and stir through the chilli capsicum and lime juice.
Mix the honey and miso paste together and spread it over the salmon steak.
Grab a large piece of baking paper and place it in a wide bowl. Fill the bottom with the corn, capsicum, lime juice and chilli and lay the salmon over the top. Fold all the edges up to make a large parcel and staple together (you can use foil if you don't have baking paper and a stapler).
Place in the oven on a baking tray and cook for 15 minutes.
In the last 5 minutes, steam the English spinach - serve the salmon with the spinach.
